Instructions of recipe of Japanese seasoned boiled egg(Ramen egg)
Boil eggs (Male a hole before boiling them)
Keep eggs at room temperature to prevent egg break because of rapid temperature change. Before boil them, make a tiny hole on egg's bottom ( On bigger bottom.) to make easy to peel them ,and put yolk center.
When water is boiled, put eggs in it. Then boil eggs for 6 minutes at strong fire.( 6 minutes is the time to make half boiled egg like photo above!)
Peel egg shells in cooled water
Put eggs in cooled water soon not to yolk solidify. And peel their
Make seasoning sauce
Mix 2 table spoons of sweet sake, 1/2 table spoon of sugar, 1 table spoon of Oyster sauce and 100ml of water. And put it into pot and boil.
Soak eggs with seasoning sauce
After seasoning sauce has been boiled, put it into container. And soak boiled eggs with seasoning sauce.
Keep them for 5days! Seasoned egg on below photo is day5's one.
