In Japan, Japanese fried chicken is called "Kara-age". At convenient store LAWSON, Kara-age Kun is so popular. If you bite both Kara-age Kun and Onigiri rice ball together, .........."Booom"!! tasty flavor will explode in your mouth!
So in this article I will share how to make Japanese fried chicken with koji rice salt.

Japanese fried chicken with koji rice salt recipe instructions
Cut ingredients
Grate garlics and ginger. Cut chicken legs into bite sizes.
Make seasoning sauce
Put 3 tablespoons of koji rice salt . Put 1 tablespoon of sesame oil and Japanese cooking liquor each. And also put grated garlics and ginger and 1/2 teaspoon of honey.
Flavor chicken for one night
Put chickens into seasoning sauce for one night(About 8hours.Too much long time makes chickens salty.), and keep them in refrigerator.
Coat with potato starch
After flavor chickens, coat them with potato starch.
Fry checkins
Fry checkins. Be careful not to burn them, and start to fry them with low heat 160 degrees〜170degrees. ( Because of seasoning sauce, checkins are so easy to be burned.)
After putting checkins in pot, turn up the fire a little because checkins make oil cool.( Keep 160degrees〜170degrees.)
Then fry them 3〜4minutes, and get them outside the pot. And keep them stay outside for 1〜2minutes to be cooked with own residual heat.
After that, fry again with 180〜190degrees oil for 1〜2minutes. (To make coating crispy.)
Done!!!
It tastes Umami mildly and you will want more pieces after one first bite. (I think!)

Japanese fried chicken with koji rice salt/scale 2people
・300g of Checkin legs
・3 tablespoons of koji rice salts
・1 tablespoon of Japanese cooking liquor
・1 tablespoon of sweet sake
・1 tablespoon of sesame oil
・one piece of garlic
・one piece of ginger
・1/2 tea spoon of honey
・potato starch (as needed)
・oil (as needed)
